healthy Bolognese recipe

My HEALTHY version of spaghetti bolognese

One of my favourite dishes to cook is an old family favourite, Spaghetti Bolognese, but with my added health twist (as seen on sporteluxe.com).

So, I guess your wondering what my healthy twist is? Well all it is, is I just replace the pasta with vegetables. That’s it. So simple. I personally like to add steamed Brocollini. But in this video i’ve used baked Pumpkin, Parsnip, Beetroot and Sweet Potato. You can add anything you want, so i’ll leave it up to you.

So for the bolognese recipe you’ll need the following…

Cold pressed olive oil
3 x stalks of celery (finely diced)
2 x onion (finely diced)
2 x carrots (finely diced)
500 gm of extra lean pork mince
500 gm of extra lean veal mince
5 tablespoons of tomato paste
1/2 cup of chicken or beef stock
Salt and pepper to taste
Fresh Basil, oregano and thyme (a decent sprinkle)
